GENERAL DESCRIPTION
Under the direction of an employee of a higher classification, performs skilled general cooking and/or building care work involving the preparation of food in large quantity and/or the general upkeep of facilities for the department. Work may involve preparing food according to a prescribed menu and schedule and maintaining care of the kitchen workspace, including kitchen equipment, and/or the cleaning and maintenance of departmental buildings. Moderate independent judgment is exercised. Work is reviewed through inspections, conferences, and reports. Performs other work as requested.

ESSENTIAL WORK TASKS
Prepares a variety of foods, including baked goods, in large quantity from a pre-determined menu in accordance with already established recipes. Operates and cleans large and small kitchen appliances, such as dishwasher, electric stove, microwave, mixer, blender, slicer, steam cooker, baking ovens, etc. Cleans food preparation and storage areas and maintains sanitation standards at all times. Prepares food for steam tables in a cafeteria or for delivery by serving carts. Handles food properly according to food safety practices; maintains safe cooking and food storage temperatures. Operates a vehicle for the delivery of meals, supplies, equipment. Keeps records of food production count, needed repairs, and completed replacements and prepares reports for the same. Cleans and maintains facilities by sweeping and mopping floors, stripping and waxing or buffing floors, vacuuming and shampooing carpets, and sweeping sidewalks. Dusts and polishes furniture, cleans upholstery, curtains, and blinds, washes windows, empties trash cans, picks up litter, and cleans spills. Inspects, cleans, and maintains restrooms, including restocking supplies and performs minor maintenance by plunging clogged drains. Adheres to safe working conditions and the safe operation of all appliances. Participates in training programs and workshops; participates in staff meetings, when deemed necessary.

KNOWLEDGE, SKILLS, AND ABILITIES
Knowledge of materials, methods, and equipment used in preparing and serving food on a large scale. Knowledge of health and safety practices involved in cooking, including safe food handling and sanitation of the kitchen workspace and equipment. Knowledge of safety hazards and standards necessary to operate machinery and equipment used to cook and clean. Knowledge of basic computer systems and programs like Windows and Microsoft Office to be able to compose emails, keep records, and prepare reports. Skill in the use and care of kitchen utensils and equipment and in the use and care of small cleaning appliances with which to prepare and store food, to clean the facilities, and to replace worn, broken, or missing items. Ability to read written menus and recipes and calculate figures such as fractions to convert recipes to different serving sizes. Ability to operate small kitchen and janitorial appliances. Ability to safely use kitchen and cleaning materials, chemicals, and equipment. Ability to take direction from an employee of higher classification as well as work effectively with co-workers. Ability to work long hours while standing, squatting, bending, climbing and the ability to lift up to 50 pounds. Ability to apply good work habits such as punctuality, reliability, preciseness, and dependability in order to effectively complete assigned tasks and contribute to the smooth operation of the department and division.

MINIMUM REQUIREMENTS

EDUCATIONAL AND EXPERIENCE
High School Diploma, GED, HiSET, or equivalent certificate of competency and one year of experience in food preparation and/or in the custodial care of a building.

SUBSTITUTIONS
Any equivalent combination of education and experience.

CERTIFICATIONS / LICENSES / REGISTRATIONS
(Unless otherwise specified below, must possess at the time of appointment and must be maintained current throughout employment in this classification.) Must have a valid Louisiana driver's license at the time of appointment and must be maintained throughout employment in this classification.
