GENERAL DESCRIPTION
Under the direction of an employee of a higher classification, performs skilled general cooking and routine repetitive laundry work at the detention facility. Work involves preparing and cooking a variety of foods from menus provided, responsibility for adherence to a prescribed schedule, and the care and cleaning of kitchen equipment and facilities. Work also involves operating one or more kinds of laundry equipment in the laundering and mending of clothing and linens, as well as related duties such as cleaning the laundry room and distributing and sorting clothing items. Work is performed with some latitude for independent judgment and action. Work is reviewed through inspection and results received. Tours of duty are on a shift basis (day and/or night), may include weekends and holidays and are subject to rotation. Performs other work as requested.
ESSENTIAL WORK TASKS
Prepares meats, fish, poultry, vegetables, and soups; prepares and bakes breads, cakes, cookies, and pies; cooks menu-directed food items in accordance with established recipes.
Operates dishwasher and standard cooking equipment such as mixing machines, slicer, steam cookers, toasters, food choppers, baking ovens, electric stoves, steam tables, kitchen scales, and salad bar.
Cleans cooking equipment, refrigerator, and work area to maintain sanitary and healthful conditions; observes safe work habits.
Places food on steam tables and serving carts; may prepare and serve food items in a cafeteria or snack bar.
Completes daily food production records; maintains clothing and supply records.
Operates and maintains washing and drying equipment.
Classifies, sorts, inspects, folds, counts, or checks laundry; mends and maintains all clothing as required.
Maintains laundry room in a good state of cleanliness at all times.
Assists in ordering new clothing, bedding, shoes, etc.; determines replacement needs, locates and selects the best quality available within a fixed budget amount.
Assists in ordering cookware, including utensils, plates, cups; assists in ordering food items, kitchen towels, pot pads, and special cleaning agents for kitchen use only.
KNOWLEDGE, SKILLS, AND ABILITIES
Knowledge of the materials, methods, and equipment used in preparing food on a large scale.
Knowledge of the care and cleaning of kitchen equipment.
Knowledge of health, sanitary, and safety practices involved in food preparation and safety precautions in laundry operations.
Knowledge of materials and methods used in laundering, sewing, and mending clothing.
Skill in the use and care of kitchen utensils and equipment.
Ability to work from written menus and standard recipes and to adapt them to the requirements of varying numbers of meal preparations.
Ability to work with delinquent youngsters.
Physical stamina to work while standing and under conditions of high temperature and humidity.
Ability to establish and maintain effective working relationships with other employees and the general public.
Ability to apply good work habits such as punctuality, reliability, preciseness, and dependability in order to effectively complete assigned tasks and contribute to the smooth operation of the department and division.
MINIMUM REQUIREMENTS
High school diploma, GED, HiSET, or equivalent certificate of competency, and experience in institutional or commercial food preparation.
SUBSTITUTIONS
Vo-tech degree in Hospitality of Food Safety Manager certificate will substitute for experience requirement. Any equivalent combination of education and experience.

In accordance with Licensing Standards of the Louisiana Administrative Code (Title 67, Part V, Subpart 8, Chapter 75, Juvenile Detention Facilities, §7511. Facility Responsibilities, B. Criminal Background Clearance), all employees of this classification assigned to the Juvenile Services Detention Center must pass a criminal background check and/or be fingerprinted at the time of appointment. Both appointment and continued employment at this location is contingent upon the ability to pass a criminal background check. Failure to pass a criminal background check renders a candidate or current employee ineligible for employment at this location.
